Grilled Trout with Mushroom Broth
Ingredients
Mushroom Broth
1 oz unsalted butter
1 cup diced yellow onions
1 tsp minced garlic
1 lb sliced mushrooms
1 1/2 cups Chicken Stock
10 oz white wine
1 Tbsp fresh thyme, chopped
1 tsp marjoram
1/2 tsp sea salt
1/4 tsp ground black pepper
1 1/2 lb rainbow trout
1/2 tsp sea salt
1/2 tsp freshly ground black pepper
Instructions
To prepare sauce, melt butter in pan. Add onions and garlic. Sauté to 5 minutes. Add mushrooms and cook for 10 minutes. While stirring, add chicken stock, wine, pepper and salt. Simmer for 10 minutes. Finish by adding thyme and marjoram.
Season trout with salt and pepper. Brush lightly with olive oil and grill. Serve each piece of trout with 6 ounces of mushroom sauce.
