Lamb Tataki
Ingredients
Grapefruit Vinaigrette
1/4 cup fresh grapefruit juice
1/4 tsp fresh chopped mint
Pinch sea salt
1/2 tsp extra virgin olive oil
4 oz lamb loin chops, bones removed
1/2 cup sliced avocado
1/2 cup peeled grapefruit segments (about 1/2 med grapefruit)
1/2 tsp sea salt
1 1/2 Tbsp chopped pistachios
Instructions
In a medium bowl, combine all ingredients for the Grapefruit Vinaigrette and set aside.
Lightly coat a medium sauté pan with canola oil spray. Place lamb in sauté pan and sear over medium-high heat for about 1 minute on each side, leaving it rare. Thinly slice lamb and arrange on a dish.
Arrange avocado slices on top of the lamb then arrange grapefruit segments. Dress with Grapefruit Vinaigrette. Season with salt and garnish with chopped pistachios.
