Mediterranean Tuna Salad Wrap
Ingredients
4 10-inch whole-wheat tortillas
4 lg lettuce leaves
8 slices tomato
Mediterranean Tuna Salad
1 Tbsp red wine vinegar
1 Tbsp fresh lemon juice
2 Tbsp water
2 Tbsp extra virgin olive oil
2 cans water-packed light tuna, drained, about 12 oz
2 Tbsp capers
2 Tbsp chopped mixed olives
1/4 cup diced red or yellow bell peppers
2 Tbsp chopped fresh chives
2 tsp chopped fresh parsley
1/2 tsp lemon peel
1/4 tsp freshly ground black pepper
Instructions
In a large bowl, combine vinegar, lemon juice, water and olive oil. Add tuna, capers, olives, bell peppers, chives, parsley, lemon peel and pepper and stir until well combined.
Place 1/2 cup of salad into tortilla. Add one lettuce leaf and 2 tomato slices. Roll burrito style, leaving one end open.
