Sole with Lemon Grass Red Bell Pepper Salad
Ingredients
Lemon Grass Red Bell Pepper Salad
3 red bell peppers, roasted and thinly sliced
3 Tbsp minced lemon grass
1 1/2 Tbsp sherry vinegar
3/4 tsp sea salt
1/4 tsp freshly ground black pepper
4 sole fillets, about 4 oz each
1/4 tsp sea salt
1/4 tsp freshly ground black pepper
1 Tbsp extra virgin olive oil
Instructions
In a medium bow,l combine all ingredients for Lemon Grass Bell Pepper Salad and mix well. Set aside.
Season fish with salt and pepper. In a large sauté pan, sauté in olive oil about 3 to 5 minutes on each side, or until cooked through. Serve 1 fish fillet with 1/3 cup Lemon Grass Bell Pepper Salad.
