Thai French Toast with Orange Ginger Syrup
Ingredients
1 lg egg
4 egg whites
3 Tbsp lite coconut milk
1/2 cup nonfat milk
1/4 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp pure vanilla extract
8 slices multi-grain bread
Orange Ginger Syrup
1 Tbsp orange marmalade
1 tsp fresh minced ginger root
1/2 cup pure maple syrup
1 tsp fresh lime juice
Instructions
In a shallow bowl, combine eggs, milks, spices and vanilla. Mix well.
Heat a sauté or grill pan and spray with canola oil spray. Dip both sides of bread in egg mixture. Cook over medium heat until golden brown, about 1 minute on each side.
Combine all ingredients for syrup in a small bowl and whisk to blend well.
Serve 2 slices toast with 2 tablespoons Orange Ginger Syrup.
