Tuna Melt with Mustard Sauce

Ingredients
Tuna Salad
- 1 can water-packed light tuna, drained, about 6oz
- 2 Tbsp minced red bell pepper
- 2 Tbsp minced yellow bell pepper
- 2 Tbsp sweet pickle relish
- 2 Tbsp minced celery
- 2 Tbsp canola oil mayonnaise
- 1/2 tsp Dijon mustard
- Pinch sea salt
- Pinch freshly ground black pepper
Mustard Sauce
- 1 tablespoon whole grain mustard
- 1 tablespoon Dijon mustard
- 1 teaspoon honey
- 1/2 tsp Coleman’s dry mustard
- 1 1/2 tsp plain lowfat yogurt
- 4 slices rye bread
- 4 slices Swiss cheese, 1 oz each
Instructions
Combine all ingredients for tuna salad in a medium bowl and mix well.
In a small bowl or cup, combine all ingredients for mustard sauce.
Spread 1/3 cup tuna salad on one slice of rye bread. Top with 1 tablespoon Mustard Sauce and 1 slice of cheese. Repeat with remaining ingredients. Place under broiler for 1 to 2 minutes, or until cheese melts.
