Ingredients

1/2 cup minced red onion
1/4 cup minced leeks
3/4 tsp minced garlic
3 1/4 cups 2% milk
1/3 cup unsalted butter
1/4 cup heavy cream
1/2 tsp freshly ground black pepper
3/4 tsp sea salt
1 1/4 cups hominy grits
2 Tbsp minced chives
2 Tbsp minced scallions

Instructions

  1. In a large saucepan, sauté onions, leeks and garlic until translucent. Add milk, butter, cream, salt and pepper. Whisk in grits and bring to a boil. Cook 5 minutes. Add scallions and chives.

  2. Lightly coat a square baking pan with canola oil spray. Pour in grits and let set. Cut into 12 cakes and remove from pan. Sauté lightly on both sides in a large sauté pan until golden brown.
