Fruit Mix
3 Tbsp cane sugar
1/4 cup cranberry nectar or juice
1 cup diced fresh peaches
1 cup fresh raspberries
1 cup fresh blueberries
1 cup fresh blackberries
Creamy Vanilla Sauce
1 cup plain Greek-style yogurt
3 Tbsp low-fat cream cheese
3 Tbsp pure maple syrup
2 tsp cane sugar
1/2 tsp pure vanilla extract
1/4 vanilla bean, scraped
In a large bowl, combine sugar, cranberry juice and fruit. Lightly crush the fruit while mixing the ingredients together until sugar is dissolved.
Combine all ingredients for the Creamy Vanilla Sauce in a blender and blend until well mixed.
Layer 1/2 cup of fruit mix with 3 tablespoons of Vanilla Sauce in eight small parfait glasses.
